2-Minute Blueberry Ice Cream
Dreamily creamy and bursting with juicy blueberry flavor, you will never believe that this frozen treat can be made in under 2 minutes! And, guess what else? You only need 2 ingredients! Not only is this 2 minute blueberry ice cream a wonderful healthy dessert, but it can also absolutely pass as a delicious and nutritious breakfast or snack!

The weather is warming up and I’m already in full summer mode: t-shirts, shorts, sunglasses, and (obviously!) ice cream. In my opinion, you can’t do summer without ice cream (although kudos to you if you can resist it lol). If you’re logic is consistent with mine ie. ice cream is the greatest thing ever invented, then you’ve probably wondered at some point how you can enjoy your favorite frozen treat every day. I mean, ice cream isn’t exactly the healthiest thing to eat on a daily basis….however, today I have made your dreams possible; your life is forever changed!
Today’s recipe post is less of a recipe and more of a “life hack”. Why? Because it’s so ridiculously easy to make! Quite frankly, I almost thought the “recipe” was too simple to write a post about, but then, well, I just couldn’t resist sharing. Everyone needs to know this little life hack, and I know you and your family will love it. But enough of me talking….I know you’re just dying to know the secret 😉
Ingredients You Need

Frozen Blueberries~ Now that you’ve seen the ingredients, I think you might be starting to get the picture. For this recipe it is imperative that you use frozen blueberries, not fresh. Why? You guessed it: the yogurt will not freeze into an ice cream-like consistency. I have not experimented with other frozen fruits, but if you wanted to be different, I would go with frozen blackberries or raspberries. Larger chunks of frozen fruit (like strawberries, mango or pineapple) will be too big and hard to chew.
Vanilla Yogurt~ For ease and convenience, I like to just use yogurt that is already sweetened from the store. However, a healthier option would be to use plain yogurt, add a splash of vanilla extract and sweeten with honey to taste. Whichever option works perfectly fine. Also, greek yogurt would make the ice cream extra creamy, and give you an extra protein boost!
The Dance
There is seriously almost zero effort that goes into this delicious frozen treat! Just add the frozen blueberries and yogurt to a bowl and stir together. Let the mixture sit for one minute then continue stirring until the yogurt is frozen and scoopable.

This ice cream is delicious served as is, or you can make it fancy by topping with your favorite ice cream toppings. My personal favorites are crushed graham crackers, chopped nuts and homemade whipped cream 😀

This 2 minute blueberry ice cream is perfect for whenever you’re craving a cold, frozen treat, but don’t want to wait hours for traditional ice cream or popsicles to freeze. Now, does this ice cream taste exactly like the real thing? No. It’s yogurt and frozen blueberries, not heavy cream, sugar and egg yolks. 2-Minute Blueberry Ice Cream
Ingredients
- 2 cups frozen blueberries
- 1 cup vanilla yogurt see notes
Instructions
- To a medium bowl, add the frozen blueberries and vanilla yogurt. Stir together, then allow to sit and freeze for one minute. After a minute, stir again and continue stirring until the yogurt is frozen.
- Scoop the ice cream into bowls and add ice cream toppings if you wish. I like crushed graham crackers, chopped walnuts and whipped cream. Serve immediately and enjoy!
