American Flag Pancake

Soft, fluffy and bursting with berry flavor, this American Flag Pancake is perfect for a patriotic and wholesome breakfast!

As a young child, I always thought that traditional flag cakes were so pretty and deliciously sweet. Whipped topping, artificial blueberry and strawberry flavoring, vanilla boxed cake mix, what’s more to love when you’re a kid? Now that I’m a bit older, however, I’m not so keen on those unhealthy junk foods. I decided that I wanted to remodel the traditional flag cake with a completely new design: breakfast pancake! The ingredients in this flag cake are wholesome, while still tasting yummy. Kids, teens and adults will all devour this breakfast treat without even thinking about it being healthy!

Ingredients
Let’s take a look at the wholesome ingredients that go into this treat:
Whole Wheat Flour~ Boosts fiber and nutrients while still producing a soft, fluffy texture
Quick Oats~ Oats also add fiber which helps you to feel full longer
Brown Sugar~ Provides slight sweetness to the pancake. You can also use regular white sugar, honey or maple syrup if you wish.
Salt, Cinnamon and Vanilla Extract~ Salt accentuates the sweetness of the pancake while the cinnamon and vanilla provide a pleasant background flavor.
Baking Soda and Baking Powder~ Small but mighty, these leavening agents do an important job to ensure that the pancake rises evenly.
Eggs~ Aid in leavening the pancake and creating a soft crumb
Milk and Vinegar~ Most of the moisture in this recipe comes from a combination of milk and vinegar. The acid in the vinegar curdles the milk and reacts with the baking soda to help the pancake rise. Although I used fat-free dairy milk, you can use whatever type of milk you have on hand.
Canola Oil~ Oil adds fat and moisture to develop a softer texture. You can use vegetable oil, olive oil, melted coconut oil, whatever is available in your pantry. Even though the texture might be slightly gummy, you could also try substituting applesauce, mashed banana or yogurt for the oil if you want to reduce fat.
Blueberries and Strawberries~Rich in antioxidants, these superfoods add a nutritious boost, while adding vibrant color and tart berry flavor.
Shredded Coconut~Adds a delicious flavor and texture to the top of the pancake. Perfect for the white stripes!
The Dance
This American Flag Pancake is super simple to put together. The hardest part is slicing the strawberries! I sliced each strawberry into three or four pieces, like shown below.

After slicing the berries, all you need to do is whisk the ingredients together, pour the batter into a large sheet pan and decorate to your heart’s content!

Bake, slice, drizzle with maple syrup and eat! And don’t forget to do a little dance too 🙂 Happy 4th of July!!

- 1 13"x18" sheet pan
Ingredients
- 3 cups whole wheat flour
- 1/2 cup quick oats
- 3 tbsp brown sugar
- 1 tsp salt
- 1 tsp baking soda
- 2 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 3 cups milk
- 3 tbsp vinegar white or apple cider works
- 2 tsp vanilla extract
- 4 large eggs
- 1/4 cup oil
- 3/4 cup fresh blueberries
- 1 cup sliced fresh strawberries
- 3/4 cup sweetened, shredded coconut
Instructions
- Preheat your oven to 425 degrees fahrenheit and grease a 13×18 in sheet pan with cooking spray.
- In a separate bowl or jar, stir together the milk and vinegar and allow to sit while you mix together the dry ingredients.
- Whisk together the flour, oats, brown sugar, salt, baking soda, baking powder and cinnamon in a large bowl. Add the vanilla, eggs, oil and curdled milk and stir until combined.
- Pour the batter into your prepared pan.
- Decorate the batter in the shape of a flag with the blueberries, strawberries and coconut before placing in the oven.
- Bake for 12-15 min or until a toothpick inserted into the center comes out clean.
- Allow to cool a few minutes before slicing into squares and enjoying a patriotic breakfast!
