Chocolate PB Breakfast Ice Cream

Ice cream for breakfast? Absolutely! Smooth, chocolatey, thick and creamy, this chocolate peanut butter “ice cream” is perfect for adding a healthy boost to your morning!
Since my post earlier this week was all about chocolate cake for breakfast, I couldn’t help but make a recipe for chocolate breakfast ice cream too. This recipe has been a favorite of mine for a long time because, not only is it simple and uses easy-to-find ingredients, but it’s shockingly healthy! And believe me, this “ice cream” doesn’t taste healthy. Let’s take a look at the ingredients, in case you need more convincing.

Ingredients
Bananas~This fruit is a good source of potassium, vitamin B6 and vitamin C. Bananas are also naturally sweet so there is no need for added sugar in this recipe.
Cocoa Powder~In this recipe, you can use regular unsweetened cocoa powder or dutch-processed cocoa powder. Personally, I am fan of the dutch-processed cocoa because it produces a darker, more chocolatey flavor, but feel free to use anything you have on hand.
Peanut Butter~Rich in healthy fats and protein, peanut butter helps to make this ice cream more filling, while also adding a creamy texture. If you wish to omit the peanut butter to keep this recipe fat-free, you can do so and still have a fabulous ice cream.
Instant Coffee Granules~Optional but really does accentuate the chocolate flavor. I recommend adding if you have it on hand.
Milk~Any kind of milk works here. I used fat-free dairy milk, but almond, oat or soy milk are also great. Just remember with dairy milks that the higher the percentage used, the greater the fat content of this recipe will be, which will affect your nutrition facts. In this recipe, the calorie count is calculated using fat-free dairy milk.
The Dance
There is really only one step to this recipe: add all the ingredients to a food processor or high-speed blender and process until smooth. Make sure to stop the machine and scrape down the sides of your food processor once or twice during blending to ensure that all those yummy ingredients get mixed in.



Scoop the “ice cream” into two small bowls, top with mini chocolate chips and chopped peanuts if desired, and serve one to you and one to a friend. Or you could just serve both to you…

Chocolate PB Breakfast Ice Cream
Equipment
- 1 Food Processor or Blender
Ingredients
- 2 medium size bananas cut into chunks and frozen
- 3 tbsp unsweetened cocoa powder
- 2 tbsp peanut butter
- 1/2 tsp instant coffee granules
- 1/4-1/3 cup milk *see notes
Instructions
- Place all ingredients into a food processor or blender and process until thick and smooth.
- Scoop into bowls, sprinkle with chocolate chips or nuts if desired, and enjoy!

Ummmm, yeah, ice cream for breakfast, Do I even need to say anymore? It was better than great it was a dream come true! Sweet, creamy, chocolates goodness, and it’s even healthy so I can have extra servings, right?

This is the best smoothie I’ve ever had. It really does taste just like ice cream!! My bananas weren’t diced like the recipe called for, they were frozen in half which made blending a little harder but even though it took long it was worth the work! Thank you for this delicious recipe!

I made this recipe for breakfast this morning and added fresh spinach from my garden. You would never know the spinach was there and it amped up the nutrition!

Delicious healthy ice cream recipe! I also added some oats and honey and placed it in the freezer for a few minutes after blending. So good!
