Patriotic Pops

Colorful, refreshing and festive, these patriotic popsicles are perfect for an Independence Day treat! Make a batch and serve at breakfast, as a snack or healthy dessert!

Summertime is the season of popsicles: fudge pops, creamsicles, freeze pops, fruit bars… Now, don’t get me wrong, when you’re outside in ninety-five degree weather, hot and sweaty, pretty much anything icy cold is refreshing. But, when I want to avoid all the artificial colors, flavors and preservatives, I reach for these homemade Patriotic Pops. With only three ingredients, these popsicles are perfect for a healthy, nutritious snack that both kids and adults will enjoy!

Ingredients
Three ingredients equals a super simple recipe! Let’s check it out.
Vanilla Yogurt~ Yogurt is the base of these popsicles. I opted for lowfat vanilla yogurt, but you can use full-fat or non-fat yogurt, or even vanilla greek yogurt. Plain yogurt could also be used although you would need to sweeten it to taste with honey or maple syrup. I have not experimented with non-dairy yogurts, but feel free to try them out if you wish.
Blueberries and Strawberries~ These berries are rich in nutrients, antioxidants and fiber. Both the strawberries and blueberries contribute to the vibrant color and tart flavor of these pops.
The Dance
The process to prepare these Patriotic Pops is fairly simple. You will need a blender to puree the blueberries with a tablespoon of yogurt. Pour the blueberry mixture into a bowl, rinse out your blender and repeat the process with the strawberries. In popsicle molds, evenly distribute a layer of blueberry mixture, then vanilla yogurt and then the strawberry mixture to create three stripes. Insert popsicle sticks and place in freezer for several hours, until frozen solid.

Once the pops are frozen, remove from the freezer, run warm water over the mold to help release the frozen treats and then enjoy immediately! Happy Independence Day!


Patriotic Pops
Equipment
- 1 blender
- 1 four-count popsicle mold
Ingredients
- 1/2 cup + 2 tbsp vanilla yogurt divided
- 1/2 cup fresh blueberries
- 1/2 cup chopped fresh strawberries
Instructions
- In a blender place blueberries and 1 tbsp of the yogurt. Puree until smooth and then pour the mixture into a bowl.
- Rinse out the blender and then puree the strawberries and another tbsp of yogurt together until smooth.
- Divide the blueberry mixture, strawberry mixture and yogurt evenly among four popsicle molds to create stripes.
- Insert popsicle sticks into the mold and place in the freezer for 4 hours or until pops are frozen solid.
- Once frozen, remove from freezer, run warm water over the mold and gently tug on the sticks to release them. Enjoy immediately!
