It is officially strawberry season and well, let’s just say I’ve been eating my fair share of strawberries….okay, maybe a little more than my fair share 😉 There’s just something so special about fresh strawberries that makes them hard to resist, especially when they come from a local strawberry farm. They’re sweet, juicy, flavorful, not to mention their gorgeous red color! What’s not to love?

I think one of the best qualities about strawberries is how delicious they are in just about any sweet treat you can imagine: cake, pie, ice cream, scones, muffins….the list is endless! While I love strawberry desserts, today we’re taking the healthier route and opting for a classic breakfast option, but with a strawberry twist: overnight oats!

Overnight oats have an ultra creamy texture, and they’re incredibly easy to stir together and then throw in the fridge overnight. In the morning, all you have to do is just scoop ‘n’ serve! I’ve made several overnight oats flavors over the years, but I’ll have to say that this strawberries and cream oatmeal might just be my favorite. And, if you’re in love with strawberries (like me!), then I have a feeling this will be your new favorite flavor too. I mean, who can resist juicy strawberries paired with sweet vanilla and cream? Certainly not me! 😀

Ingredients You Need

Rolled Oats~ For this recipe, it’s best to use old-fashioned rolled oats. Quick oats will yield a slimy texture (yeah, not appetizing!), while steel cut oats will be too tough and chewy.

Whole Milk~ You are free to use any dairy or plant-based milk, with the exception of canned coconut milk. I attempted to use coconut milk and the oatmeal ended up being waaay too thick. For the most authentic strawberries and cream flavor, I recommend using whole milk, however you can sub a lower fat option if you prefer. Just be aware that lower fat milk will yield oats that are less rich and creamy.

Honey~ I prefer to use honey because it is a natural, unrefined sweetener. However, you can also use granulated white sugar, maple syrup or agave syrup instead.

Vanilla Extract~ This ingredient is pretty important in order to achieve the best flavor. I strongly encourage you not to omit it.

Strawberries~ For this recipe, either fresh or frozen strawberries works great. If you choose fresh strawberries, be sure to hull them before mashing into a pulp with a fork or potato masher. If using frozen strawberries, make sure to thaw them in the microwave before mashing. Although fresh strawberries yield the best flavor, I will admit that mashing thawed frozen strawberries is easier. But either option works just fine.

The Dance

These strawberries and cream overnight oats couldn’t be easier to whip up! On the recipe card below, you have two options: you can use the “bowl method” or the “jar method”. For the bowl method, all you need to do is stir together the ingredients in a large bowl and refrigerate overnight. In the morning, scoop the oatmeal into bowls and serve.

If you need a breakfast that you can quickly grab in the morning on your way to work, then I recommend using the jar method. In four glass jars (1-2 cup volume), divide the oats, milk, mashed strawberries, vanilla and honey. Stir together the ingredients in each jar and then refrigerate the jars overnight. I love the convenience of overnight oats and the fact that they are packed with wholesome ingredients that keep you full all morning. Oats pack a serious punch of fiber, while strawberries add lots of nutrients and antioxidants. To amp up the nutrition even more, you could add a few tablespoons of chia seeds, ground flax seed, chopped nuts or even nut butter. Although I haven’t tried it, you might could even try adding vanilla protein powder for an extra protein boost. These strawberries and cream overnight oats are delicious any way you make them, and I know they’ll quickly become a new summertime favorite for you too! 😀

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups milk of choice see notes
  • 1 cup mashed strawberries about 1 1/2 cups whole strawberries, fresh or frozen (see notes)
  • 2-4 tbsp honey see notes
  • 4 tsp vanilla extract
  • extra diced fresh strawberries for garnish optional

Instructions
 

"The Bowl Method"

  • In a large bowl, stir together the rolled oats, milk, mashed strawberries, honey and vanilla extract. Cover the bowl and refrigerate overnight. In the morning, spoon oatmeal into bowls and garnish with fresh strawberries if desired.

"The Jar Method"

  • You will need 4 glass jars with lids that hold roughly 1-2 cups of liquid each.
  • To each jar add 1/2 cup of rolled oats, 1/3 cup of milk, 1/4 cup of mashed strawberries, 1/2-1 tbsp of honey (see notes) and 1 tsp vanilla extract.
  • Stir together the ingredients in each jar really well and then top with fresh diced strawberries if desired. Refrigerate the jars overnight. In the morning, grab a jar for an easy on-the-go breakfast. Enjoy!

Notes

*You are free to use any dairy or plant based milk in this recipe (with the exception of canned coconut milk), however, for the creamiest results, I recommend using whole milk. I have used fat-free milk before and the oatmeal is still delicious, it just doesn’t have that “strawberries and cream” flavor that you might be looking for. So just keep that in mind 🙂
**If using fresh strawberries, be sure to hull before mashing with a fork or potato masher. If using frozen strawberries, thaw in the microwave 1-2 minutes before mashing.
***You can adjust the amount of honey used depending on your sweetness preference. If you like a sweeter oatmeal, use the full 4 tbsp. But if you like just a very light sweetness, only use 2 tbsp. If you’re using the “jar method”, you can do 1/2 tbsp honey per jar for a light sweetness, or you can use a full tablespoon per jar for a sweeter oatmeal.
