Ingredients

  • 2 cups pitted, dried dates
  • 3/4 cup creamy peanut butter
  • 3/4 cup peanuts, salted or unsalted
  • 3/4 cup chocolate chips
  • sea salt for sprinkling on top optional

Instructions

  • Take a date one at a time and open it down the middle. Press the date face-down onto a large piece of parchment paper. Repeat this process with the rest of the dates to form a large rectangle. Make sure the dates are touching and even overlapping.
  • Warm your peanut butter in the microwave for 30 seconds or until melted. Spread your melted peanut butter over the date rectangle.
  • Sprinkle peanuts over top of the peanut butter layer.
  • Melt chocolate chips in the microwave in 30 second increments until they are completely melted. Pour the melted chocolate over the peanut layer and use a spatula to gently spread the chocolate over the entire rectangle. Sprinkle a little sea salt on the top if desired.
  • Slide a pan or tray underneath the parchment paper and place in the freezer. Freeze 2 hours, or until chocolate and peanut butter are firm. Use a sharp knife to cut the date bark into squares and enjoy.

Notes

*Store leftover date bark in the freezer for up to 3 months.
