Ingredients

For the Cookie Dough

  • 1/2 cup rolled oats
  • 3 tbsp almond butter or nut butter of choice
  • 2 tbsp honey
  • 1/8 tsp salt
  • 3 tbsp chocolate chips (preferably mini chips)

For the Ice Cream

  • 2 large bananas, cut into chunks and frozen
  • 1 tbsp vanilla extract
  • 3-4 tbsp milk

Instructions

  • To a food processor or high speed blender, add the rolled oats, nut butter, honey and salt. Blend until a thick dough is formed. Scoop the dough into a small bowl and stir in the chocolate chips. Form little bite sized balls from the dough, then set aside.
  • To the same food processor or blender, add the frozen bananas, vanilla and milk. Depending on how powerful your processor/blender is, you may not need to use any milk, or you might need a little more milk than called for in the recipe. Just use enough milk so that the bananas can blend smoothly into a thick "ice cream".
  • Stir the cookie dough bites into the ice cream and then scoop into two bowls. Serve immediately and enjoy!

Notes

*This ice cream becomes icy if saved and frozen, so I don't recommend saving leftovers in the freezer.
