Ingredients

  • 2 cups frozen blueberries
  • 1 cup vanilla yogurt see notes

Instructions

  • To a medium bowl, add the frozen blueberries and vanilla yogurt. Stir together, then allow to sit and freeze for one minute. After a minute, stir again and continue stirring until the yogurt is frozen.
  • Scoop the ice cream into bowls and add ice cream toppings if you wish. I like crushed graham crackers, chopped walnuts and whipped cream. Serve immediately and enjoy!

Notes

*Makes about three 2/3 cup servings.
**You can store leftovers in the freezer. When ready to eat, pull out of the freezer and allow to thaw a few minutes until soft enough to scoop and serve.
***If you prefer, you can substitute the vanilla yogurt for plain yogurt, add a splash of vanilla extract and sweeten with maple syrup or honey to taste.
